Baobab, Raspberry & Chocolate Popsicles

These popsicles take no time to make and are so fruity and refreshing! Plus you control the ingredients and know what you are eating! Get creative and add your favourites to really treat your taste buds; a dash of vanilla, a pinch of sea salt, a little nut butter, goji berries or raspberries. The choices are endless!

Organic Baobab Fruit Powder, Raspberry & Chocolate Popsicles PandaVita

Ingredients:

Popsicles:

  • ½ red pitaya peeled
  • 1 cup raspberries
  • 1 frozen banana
  • 1 tbsp Organic Baobab Powder
  • ½ cup almond milk

Raw Chocolate:

  • ¾ cup cacao powder
  • ⅓ cup coconut oil
  • ¼ cup maple syrup/coconut extract
  • 1 handful of puffed amaranth

Directions:

  1. Place ingredients in a blender, and blend.
  2. Pour the fruit & berry purée into moulds and put them in the freezer.
  3. After 15 minutes insert sticks.
  4. Freeze until firm, several hours or overnight.
  5. When ready to serve, run the popsicle moulds under warm water for a few seconds, then pull each one out.
  6. For raw chocolate:
  7. Slightly melt the coconut oil in a double boiler. Combine all your ingredients.
  8. Cool slightly before using.
  9. Dip the popsicles into a chocolate coating.
  10. Quickly sprinkle both sides with puffed amaranth.
  11. Enjoy immediately!
