Sweet Baobab and Vanilla Loaf

If you love to bake then this is perfect for you! Packed with protein and baobab, this sweet loaf can make a great snack for when you need it.

Ingredients:

  • 1 tsp Organic Baobab Powder
  • 320g oats
  • 1 tbsp vanilla protein powder
  • 1 tsp sweetener
  • 1 tsp lucuma
  • 1 tsp ground cinnamon
  • 50g honey seeds
  • 150ml water
  • 1 whole egg
  • 50ml egg whites
  • 120ml natural fruit syrup
  • 75ml coconut oil

Directions:

    1. Preheat oven to gas mark 4/180°C/350°F
    2. In your blender, blend the baobab powder, oats, sweetener, protein powder, lucuma and ground cinnamon
    3. Transfer to a large bowl and mix in the seeds
    4. In a jug, mix the rest of the ingredients
    5. After, mix the wet and dry ingredients until they're well combined
    6. Pour into a loaf tin with greaseproof paper
    7. Sprinkle some more seeds over the top
    8. Bake with a whole lot of love for 40 minutes
    9. Take out the oven and let it cool
    10. Cut into slices and serve
