Vegan Baobab & Blueberry Muffins

These vegan-friendly baobab blueberry muffins are the perfect snack or dessert. Due to the organic baobab fruit powder and blueberries, they are packed with antioxidants which will help to protect your liver and reduce skin ageing. Vegan Baobab Blueberry Muffins

Ingredients

  • 2 tsp PandaVita organic baobab powder
  • 250g all-purpose flour
  • 150g brown sugar
  • 1 ripe banana
  • 180ml non-dairy milk
  • 100ml olive oil
  • 1 tbsp baking powder
  • 1 tsp vanilla bean powder
  • ½ tsp nutmeg powder
  • 1 cup frozen blueberries
  • Additional brown sugar and berries for sprinkling on top

Vegan Baobab Blueberry Muffins

Method

  1. Preheat the oven to 180 C.
  2. Blend the banana, non-dairy milk, vanilla and brown sugar in a blender on high. Add olive oil and mix.
  3. In a large mixing bowl, stir together the flour, organic baobab powder, nutmeg powder and baking powder.
  4. Add the wet mixture to the dry and stir to combine.
  5. Gently fold in the blueberries.
  6. Spoon into a muffin pan lined with paper liners or lightly oiled.
  7. Sprinkle the tops with berries and brown sugar.
  8. Bake for 22-24 minutes at 180°C (Gas Mark 4).
  9. Let them cool for at least 10 minutes before removing from the pan.
  10. Eat and enjoy!
